Preparation
- 1.Sauté the onion, then add the monkfish cubes. Let them sauté, then cover the pot and let it simmer for a bit, adding a cup of white wine and chopped parsley.
- 2.Cook the shrimp and fry them lightly. Add everything to the monkfish and simmer for a few more minutes.
- 3.When ready, transfer everything with a slotted spoon to a heated plate, keeping it in the oven to stay warm, and strain the sauce.
- 4.Prepare the beurre manié - whisking an equal weight of melted butter with an equal weight of flour.
- 5.Gradually add it to the sauce in the saucepan, which should be below boiling point. After everything is well mixed, return to the heat to thicken.
- 6.Finally, add the cream, pour it over the fish and serve.
Notes
Beurre manié (or kneaded butter) is a mixture of equal parts softened butter and flour. It is not used for spreading, but rather as a classic French culinary thickening agent to thicken sauces, stews, and soups at the end of cooking, giving them a shiny and velvety appearance without lumps.
