Quince Paste (D. Encarnação)

Preparation

1. 1.Peel and core the quinces, then cut into pieces.
2. 2.Place them in a pot to cook. Add the sugar and water.
3. 3.Once well cooked, pass them through a food mill (passa-vite) and then return to the pot to boil again.
4. 4.Remove from heat and place in bowls, allowing to cool.
