Preparation
- 1.Two and a half cups of H₂O for 1 cup of rice.
- 2.Bring the water to a boil and add the very thin zest of 1 lemon and the salt. When it's boiling, add the rice, and when it starts to boil again, lower the heat.
- 3.Let the water reduce, leaving the rice moist.
- 4.Add Milhafre butter, 1 good heaping tablespoon, and mix well.
- 5.Meanwhile, bring the milk to a boil over low heat.
- 6.Separately, boil more milk because it usually takes a second addition, but after this step and the cinnamon, you'll add the milk, little by little.
- 7.Let the rice thicken for a long time over very low heat.
- 8.Before it starts to stick, in the second milk addition, add the sugar, two cups of sugar, and let it thicken with the little bit of the second milk.
- 9.When the rice is thoroughly cooked, combine and stir.
- 10.Add the well-beaten egg yolks. Of course, add them with the usual care.
- 11.Just bring it to a boil to cook the eggs.
- 12.Finally, add 1 tablespoon of butter to make it shiny.
